Purple, Gold and Green Miso Dish

Simple Plant Based Meal with Purple Carrots, Gold Beets, Celery, Collard Greens and Miso


The Basics

  • Preparation Time: 10 minutes
  • Cooking Time: 20-30 minutes
  • Servings: 1-2 servings


1 purple carrot (sliced)
1/4 cup carrot greens (chopped)
1/2 cup collard greens (chopped)
1 golden beet (diced)
2 celery stalks (sliced)
1 tablespoon miso
1/2 tablespoon turmeric
1/4 tablespoon cracked black pepper
1 cup natural spring water
1/2 teaspoon sea salt


  1. Add purple carrot slices, carrot greens, collard greens, golden beets, celery, miso, turmeric, black pepper and water to pot, set heat to medium and cook down for about 10 minutes (stirring regularly)
  2. After about 10 minutes of cooking on medium, stir ingredients around, cover the pot and set heat to low-simmer for about 10-12 minutes (leave pot lid on and covered)
  3. Open lid, stir ingredients around evenly and test a beet piece or two for readiness
  4. Once ingredients are fully cooked to your satisfaction, serve warm and sprinkle sea salt to taste
