Grab the skillet, prepare the Clarified Basil Butter (and the Mango Relish) and season the swordfish, we doing up a tasty Seasoned Swordfish And Veggie Chips Dinner tonight!

Seasoning

1/4 Tsp Salt
1/4 Tsp Pepper
1/2 Tsp Honey
1 Tbsp Clarified Basil Butter
3/4 Lb Swordfish Filet
1/3 Whole Carrot
4 Snow Peas
2 Small Pieces Broccoli
1.5 Tbsp Mango Relish (with Sliced Basil added)

Preparation And Cooking

Spread 1/3 clarified basil butter equally on one side of swordfish filet then adequately season with salt, pepper and honey. Flip swordfish over and repeat the same steps. Place the remaining 1/3 of butter in skillet and set the heat on to low (I used last to lowest setting on my stove) so as to get the butter melted. Next, toss the swordfish in and let cook on each side for approximately 5-7 minutes prior to taking out of skillet. With the vegetables sliced how you like them (I personally sliced them thin, like chips for this dish), place them into the (now butter greased) skillet and sear them gently just before pouring either on top of fish or alongside of fish. Spoon on the Mango Relish (with Basil added) and that’s a wrap. (Get you a nice glass of tea, perhaps, and) Dig in, dinner’s ready!

With the leftover (what I like to call) magic sauce created by Brooks Bayne (who you may know from Twitter as @BrooksBayne) for the delicious corn he cooked for all of the folks at #thebeachhouse supper, I utilized said sauce for many a snack. Yep. Indeed. With the Slow Cooked Beef Tacos, I added me some magic sauce. Then, on to my Valentine’s Day Sloppy Roast Beef Po-boy, I spooned on some magic sauce. And, then, on to my Shrimp, Egg & Beef Taco Breakfast Burrito (with Cheese) as well as on my Brie Spread Steak (w Veggies) Dinner and even my last Po-boy snack creation (which will be being published and/or delivered here shortly after this post), I added a little magic sauce. Furthermore, with a few spoonfuls left, I am thinking of adding some magic sauce flavor to at least one omelet and one pizza snack -> stay <del datetime="2009-02-23T07:19:52+00:00">tuned</del> snacking!

Magic What, Magic Who?

1 Garlic Bulb
2 Cups Cilantro
4 Sticks Of Butter
2 Habanero Peppers
…Mix all well in blender like device and pour on everything you can think of!

*To Note: Although I am 99.99999% positive that I included all ingredients and amounts here, I may have missed an ingredient (or two) so, if I did and I discover said error, I’ll follow up here and update! My apologies for the lack of clarity here but, then again, I don’t call it magic sauce for nothing!

As quick and easy to create as they are to consume, these oatmeal squares may draw a few baffled stares at first but, once that sweet, oatmeal cinnamon flavor is tasted, they prove to be a sure success, down to the very last helping.

Ingredients

2 Sticks of Butter (or margarine, your choice)
2 Cups of White Sugar
4 Eggs
2 Tsp Vanilla Extract
2 Tsp Cinnamon
1.5 Cups Flour
1.5 Cups Oatmeal

Mixing Then Baking

Melt the butter sticks then add & mix all ingredients and pour into a greased 9″ X 13″ baking pan. Bake at 330 degrees for approximately 30 minutes. Let cool then slice and serve.

To Note: Regardless of said “squares” nomenclature, this tasty snack serves just as deliciously as a square than it does as a rectangle, a circle, an octagon, a pentagon or even a crumb.

When it comes to eating good, I like to think that I know how to get down, especially when it comes to baked goods. Take, for instance, these extra lovely sugar cookies who look innocent on the outside but come swiftly to deliver a sweet, buttery sensation that will leave you whipping out the ingredients for another batch! What makes this dessert-like-treat so special is the care I extend for the butter. Yes, that’s right, the butter.

You see, instead of grabbing just any regular old margarine or spread, I like to go all out and find me some clarified butter (or clarify my own if need be). Clarified butter, as you may recall from dipping your lobster in that oily butter-like substance, is simply pure liquid, (golden) yellow butterfat, minus the water and the milk solids that are normally added to your ‘regular butters’. Try it, you’ll be amazed at the difference in cookie texture and all around munch-a-bility when you bake with clarified butter.

Ingredients:

1/2 teaspoon baking powder
1 egg
1 cup clarified butter
1 teaspoon vanilla extract
1 teaspoon baking soda
1 1/2 cups white sugar
2 3/4 cups all-purpose flour
*To Note: This amount called for will serve approximately 50 (depending on size of cookies)

The Nitty-Gritty:

Combine flour, baking soda, and baking powder in a bowl of choice. Mix clarified butter and sugar with the egg and the vanilla extract in a separate bowl then stir in the dry ingredients (i.e. the flour, baking soda and baking powder). Next, form the desired shapes/balls with your now mixed cookie dough and place atop your favorite cookie sheet.

Baking Instructions:

Preheat oven to 350 and bake for 10 minutes or until cookie edges begin to brown.

Suggested Beverages

Besides a cold glass of (whole) milk, you can perhaps try some fruit tea, some (white) wine or some coffee with these snacks.

Miscellaneous:

Adding ice cream and fruits will get you a couple extra <del datetime="2009-02-05T12:04:08+00:00">brownie</del> cookie points

*How do you do your cookies?
