Nothing beats waking up to a warm crock-pot letting off yummy odors of cooked chicken with hints of pepper and pineapple all about it. Trust me. And when you can set the food to (slow) cook while you take rest, it just doesn’t get any easier either…

What Was Slow Cooked

1 Whole Baby Chicken (Approximately 3+ Lbs)
1 Whole Pineapple (Sliced Into Pieces)
1 Onion
1/2 Tsp Pepper

The Specifics

After slicing the pineapple into pieces, shove all said pieces into the chicken until they all fit in. Next, sprinkle both sides evenly with pepper and set in the crockpot on low and let slow cook for about 6.5-7 hours prior to giving in to the delicious smell and opening up the crock-pot to find this Pineapple Pepper Chicken Snack Creation ready to be eaten (for breakfast nonetheless, if you’re like me ). And it truly was/is as simple as that – got to love crock pots!

Extras

Sure, sure, going by the image, you can see that I did, indeed, add some broccoli along with a few slices of navel orange. What, it was good!

Furthermore, if you are one to add herbs (i.e cilantro, basil, mint, parsley, thyme, lavender, spearmint, dill, rosemary, sage) to your snacks, toss said herb in with the relish-ness and see what it do. I came up with this relish when I was consuming all of that Tequila Lime Pork Loin and used cilantro along with it…. Stay tuned to see these dishes as well as other dishes of mine that get treated (right) with this here relish.

Yes, a fresh orange was used for this particular chicken meal too. But Scotty, we just had an orange flavored chicken meal for dinner on Tuesday night and now we have to eat it again? Well, the packet of chicken breasts that I bought came with two breast filets and I marinated both at the same time, cooking one after about 5 hours of marinating then cooking this one after about 29 hours of marinating. And, to mix things up a tad, I did scoop some Shitake mushrooms along with some asparagus, grabbed my sharpest blade and sliced up these fresh veggies for their timely dining with the orange marinated (and now orange stuffed) chicken breast. Hungry yet?

How Dinner Was Done

After (previously) seasoning both sides of this chicken breast with honey, salt, pepper and fresh juice from an orange then letting marinade atop orange peels, I carefully made a small slither on top of this breast for shoving a piece of orange in between. Once the oven was preheated to 350, I placed the chicken in the oven, set the timer to 30 minutes and added the sliced mushrooms and asparagus along with a few drops of water to a small pot and began to cook covered on low (leave on low and will slowly cook and magically be done in aprox 30 minutes, just when the chicken breast is fully cooked). To note, I did flip the chicken breast once (after 15 minutes) and then put back in for another 15 minutes. And, somewhat similar to the previous orange flavored chicken dinner gathering, I took the cooked chicken out, added the sliced Shitake mushrooms and asparagus and chomped it all down with another cold glass of fruit flavored tea. Bizz-am!

Yes indeedy, you read it right. And, as out of the ordinary as this dish sounds, take it from me (a first-timer for the watermelon and chicken fixing) this combination is deliciously good! But, so there’s no confusion, before I break down the preparation along with the cooking instructions, let me just say that, although I can’t admit to have previously fathomed using salt, pepper, honey, orange peels and a couple drops of fresh orange juice as a marinade, I literally made do with what was in the fridge on this particular meal preparation (and came out with a winner). Trust me, trust me – try it, you might like it.

How Dinner Was Done

I simply added a few squirts of honey along with a dash of salt, a dash of pepper and a squeeze of an orange to a boneless chicken breast filet and placed it on top of some orange peels for marinating. After marinating for about 5 hours (does not have to be this long, 30min-1hour is typically sufficient but, I got held up and, quite frankly, I like to soak when I marinade ), I preheated the oven to 350 and began to slice the (seedless) watermelon. Once the chicken was cooked, I added the sliced watermelon right on top of it, paired it with a cold glass of (fruit) tea and, the rest is digesting.

PS – If you are looking to pair this particular meal with a wine of choice, might I recommend trying it with a pinot grigio (white wine).

Re-cap

Items Used -
(1) chicken breast filet
dashes of salt & pepper
fresh orange juice
smack of honey
*Both sides were equally seasoned

Cooking Specifics -
30 minutes on 350 in oven (top shelf fine)
*For best result, I recommend doing 15 minutes on each side

Suggested Drinks -
Fruit tea or Pinot Grigio
