Well then, it’s been about 5 months since I last stepped up to the plate and served some fresh, home made (foodie) content on this here, Scotty Snacks weblog. Yep, after July’s Ice Cream Social (that I had the pleasure of doing with Tangled Noodle and Savor The Thyme), I literally froze up for a few! And, for that, I’m going to have to <del datetime="2009-12-26T03:12:55+00:00">plead</del> dish out the same old, Snack Lackin But Not Snack Slackin

Seriously, though, nice to be back! Lord knows, I’ve got a line up of blog drafts been collecting on for way TOO long now – I got to get them off my table some time! So, what’s next? I know I’ve gots to try some of Samantha’s, Rocky Road Candy and, then, I’ve gots to get a few of these drafts out. Eventually. But, first, I think I’ll have some of this rotisserie chicken (that’s been warming in the crockpot since I last picked at it, just waiting to be turned into a chicken broth soup over the next 24-48 hours – stay yourself tuned!!). Merry Christmas, y’all, Snack On!

On any given Sunday, especially a Sunday that falls after late night/early morning Valentine’s Day festivities, some sweets always provide for a solid snacks solution. With all the necessary cookie ingredients conveniently in the presence of fresh blueberries and white chocolate chips, I couldn’t help but to put two and two together to create 12 deliciously tasty snacks that appear as yum as they taste. Similar to the clarified butter cookies that I baked about a week ago, I used clarified butter for these Blueberry White Chocolate Chip Sugar Cookies as well. Have a look-see…

Ingredients

2/3 cup and 1 teaspoon all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon baking powder
1/4 cup clarified butter
1/4 cup and 2 tablespoons white sugar
1/4 egg
1/4 teaspoon vanilla extract
12 blueberries
24 white chocolate chips

And, just as I prepared the clarified butter sugar cookies, here goes the specifics…

The Nitty-Gritty

Combine flour, baking soda, and baking powder in a bowl of choice. Mix clarified butter and sugar with the egg and the vanilla extract in a separate bowl then stir in the dry ingredients (i.e. the flour, baking soda and baking powder). Next, form the desired shapes/balls with your now mixed cookie dough and place atop your favorite cookie sheet.

Baking Instructions

Preheat oven to 350 and bake for 10 minutes or until cookie edges begin to brown.

To Note: After I placed the cookies onto the cookie sheet, I placed two white chocolate chips and one blueberry on each cookie, individually. Then, I applied a sprinkle of sugar to each once they were done baking. Add/edit/adjust for your likings accordingly.

When it comes to eating good, I like to think that I know how to get down, especially when it comes to baked goods. Take, for instance, these extra lovely sugar cookies who look innocent on the outside but come swiftly to deliver a sweet, buttery sensation that will leave you whipping out the ingredients for another batch! What makes this dessert-like-treat so special is the care I extend for the butter. Yes, that’s right, the butter.

You see, instead of grabbing just any regular old margarine or spread, I like to go all out and find me some clarified butter (or clarify my own if need be). Clarified butter, as you may recall from dipping your lobster in that oily butter-like substance, is simply pure liquid, (golden) yellow butterfat, minus the water and the milk solids that are normally added to your ‘regular butters’. Try it, you’ll be amazed at the difference in cookie texture and all around munch-a-bility when you bake with clarified butter.

Ingredients:

1/2 teaspoon baking powder
1 egg
1 cup clarified butter
1 teaspoon vanilla extract
1 teaspoon baking soda
1 1/2 cups white sugar
2 3/4 cups all-purpose flour
*To Note: This amount called for will serve approximately 50 (depending on size of cookies)

The Nitty-Gritty:

Combine flour, baking soda, and baking powder in a bowl of choice. Mix clarified butter and sugar with the egg and the vanilla extract in a separate bowl then stir in the dry ingredients (i.e. the flour, baking soda and baking powder). Next, form the desired shapes/balls with your now mixed cookie dough and place atop your favorite cookie sheet.

Baking Instructions:

Preheat oven to 350 and bake for 10 minutes or until cookie edges begin to brown.

Suggested Beverages

Besides a cold glass of (whole) milk, you can perhaps try some fruit tea, some (white) wine or some coffee with these snacks.

Miscellaneous:

Adding ice cream and fruits will get you a couple extra <del datetime="2009-02-05T12:04:08+00:00">brownie</del> cookie points

*How do you do your cookies?
