Luscious Legumes

Legume-friendly Dish with Lentils, Red Beans, Beets and Greens

The Basics

  • Servings: 3-4 servings

Ingredients

1/2 cup diced broccoli leaves
1/2 cup diced collard greens
1/2 cup diced golden beets
1/2 cup red beans (soaked, rinsed and drained)
1/4 cup red lentils
1/2 cup long grain brown rice
1 tablespoon miso paste
1 tablespoon coconut oil
1 tablespoon olive oil
1 tablespoon turmeric
1/4 tablespoon cracked black pepper
1/4 teaspoon cumin
1/2 teaspoon cayenne pepper
2 cups natural spring water
1/4 teaspoon sea salt

Instructions

  1. Place the broccoli leaves, collard greens, beets, miso paste, coconut oil, olive oil, turmeric, black pepper, cumin and cayenne pepper into pot with a few drops of water; set heat to medium and cook down for about 10-12 minutes (stirring regularly)
  2. Add lentils, red beans, rice and the rest of the water to the pot, stir all around evenly and continue to cook the ingredients down for another 10-12 minutes/until the mixture comes to a boil (stirring regularly)
  3. Once mixture reaches a boil, close the lid for the pot, set the heat to low-simmer and leave pot closed for at least 20 minutes
  4. Open pot, stir ingredients around evenly and test a red bean or two for readiness (the red beans should become soft and a bit mushy when bitten).  If beans need more time to cook, close the lid down again for another ~10 or so minutes. Otherwise, proceed to step #5 if ready.
  5. Once beans are ready, turn heat off and serve with a sprinkle of sea salt on top.
